Meet & Eat: Delilah Snell, Certified Master Food Preserver in Southern California

The 1970s may have seen the growth of the organic food industry and environmental policy, but Delilah Snell did not grow up in the kind of home that placed any importance on eating organic or caring for the environment. Her parents worked at one of the biggest oil companies in the country and even at the age of 34, Snell is still the black sheep of her family.



She's the cool hippie aunt who started an indie arts and crafts festival with her niece and owns The Road Less Traveled, a combination green homewares store and quasi-community center, offering workshops and classes on cheese-making, fermentation, preserving, and canning, all taught by Snell, a certified master food preserver and owner of a fledgling small-batch preserve business called Backyard in a Jar.



Snell works non-stop, sometimes spending 18-hour days on food-related ventures, many of which she chronicles on her blog Project Small, which also features schedules of her upcoming classes, tips on how to make delicious things like honeyed kumquats, and seasonal recipes featuring items she found in her CSA basket.

From her home base in Santa Ana, California, Snell is teaching everyone—from hipster food enthusiasts to wealthy, Orange County stay-at-home moms—how to make the most of each season, while introducing them to new, unfamiliar flavors like kimchi and her famous basil jelly.



Snell recently took a break to speak to me about her background in community activism, the unnecessary politicizing of organic food, and her new Jam Van. Here's what she had to say:



How did you get involved with this? After being a community activist in my 20s, I helped start a few community gardens and farmers' markets. Most of life's most important moments for me have been centered around food; what was made, what was eaten...The community helps with my business. People bring me fruits and vegetables to make preserves with or they call me and let me know what fruits I can pick from their trees. In turn, I'll give them a batch of whatever I make.



How exactly did you get your master food preserver certification? And what does it entail? About two years ago. I found out about a master food preservation course being offered in San Bernardino, so I took the three-month course and from there, I just started experimenting with my own recipes. To remain a master food preserver you have to volunteer between 40 and 60 hours a year, so once a month I volunteer at a booth at the Hollywood Farmers' Market and give lectures, answer questions, and do demonstrations.



Learning about food preservation has helped me branch out. Now I'm working on infused liquors, cheese, olives, different kinds of salt. All kinds of stuff.

Why do you think so many young people are becoming interested in food preservation right now? For a lot of reasons. The economy, as a form of entertainment, and as a creative outlet for people who aren't artistically-inclined. The local/DIY movement has really been growing in the past five years. We're seeing people in their 20s screen printing, woodworking, and crafting. The local food movement has become a part of that whole DIY scene.



I also think it's because Americans have become very distrustful of big business. Big business is dishonest, takes advantage of people, pollutes the water, and the products they produce are killing us. The local food movement is really about people taking their food into their own hands and fighting back.



How do you feel about the local/organic movement turning political? I feel like it's been turned into a "liberal" cause, but it shouldn't be. Making your own food used to be a part of mainstream culture and because of the economic turndown, people are going back to that. I think it's for the better.



I'm the weirdo in my family, but I've managed to win their support by giving them canning classes and serving them my preserves. When you want to show someone that this isn't about politics or agendas, cook for them.



I cooked for my whole family over the holidays; I served my infused vodka, I made food using stuff from my CSA basket and they all loved it. You have to come at people with what they like and what they're familiar with. For example, my mom loves shopping, so I took her shopping at the Hollywood farmers' market. The day stopped being about our differing opinions and beliefs and it started being about food.



No arguing, just, "Oh my god, did you taste that peach? That peach was amazing. Let's buy those peaches and make something out of them."



Many people argue that the average American family doesn't have the time or money to cook from scratch, buy local, shop at farmers' markets, etc. What's your opinion on that? It's true and it isn't. Look, you don't have to make everything from scratch and do it every single day, but why not try to do it once a week or once a month? Why not?



Why not bake your own bread or make your own jam? Why not take your kids to the farmers' market? Sure, a carton of blueberries may cost $3.75, but the stuff you're getting at the grocery store comes from who-knows-where and it's filled with pesticides. You have to try. Saying you don't have the money or don't have the time doesn't cut it anymore.



Let's talk about your products. Where do you make your preserves and what else are you working on lately? I spend every Monday, Tuesday, and Thursday canning from a commercial kitchen. On February 12th myself, Evan Kleiman, and urban farmer Kazi Pitelka will be holding a citrus celebration at Altadena Urban Farm. We'll explore the orchard and afterwards, everyone will learn how to make a basic marmalade, citrus liqueur, and dry spice mixtures. Evan and I are also talking about teaching a cocktail class at the Urban Crafts Center in Santa Monica in March.



What are your most popular preserves and where can people find your Backyard in a Jar line? People seem to love my basil jelly and peach habanero preserves. Right now you can buy my preserves from my store in Santa Ana and at Patchwork, the arts and crafts festival I started with my niece. In a few weeks I'll have a website for the preserves and people will be able to place orders online.



This year I'm really going to get this business off the ground. There are quite a few Los Angeles restaurants who've expressed interest in serving my preserves as part of cheese platters, so I'll be doing that and getting the word out on the Jam Van.

What is the Jam Van? My boyfriend and I recently restored a 1968 VW bus, so I'm going to use that as a mobile jam and pickle shop. I'm really excited about it. It's sort of a pop-up-shop and food truck all in one. There's an awning and a tasting area and people are really responding to it, so hopefully this year you'll be able to buy everything Backyard in a Jar offers from the Jam Van, including new flavors I'm working on, like lavender.



A lot of people are afraid to preserve food at home because of everything that could go wrong. What do you recommend for them? Taking a class is the best way to start. You'll learn about all of the safety precautions you should take, the science behind it all, and you'll usually walk away with a few recipes. I charge $75 for a class that usually lasts around three and a half hours, covering everything extensively and answering all of your questions.



I often teach classes out of my home. It's better than learning in an industrial kitchen because once you're on your own, you'll be canning in your home and not using professional equipment. At the end of the class, you take a crate of your own preserves home.



What people really need to know is that their preserves will taste a thousand times better than anything they're buying at the supermarket. Honestly, that stuff is crap. They're filled with chemicals and dyes to help them look normal and hide the fact that they were made with ingredients that weren't fresh.



Just stop being afraid and try it. I promise, you'll never go back.

“We wanted to be the Bose of the digital world,” Cullen said. Improvement is ongoing, with the latest advancements being the way it built its S5 boombox-style device. Sonos, not longer content to shuttle bits around the home network through a proprietary wireless system, designed a new speaker for the S5 that digitally controls the output from the different parts of the speaker.


An advantage of this is that the S5 sounds the way most consumers prefer their speakers to sound (at least according to the gurus at Lucas Arts who vetted the sound quality for Sonos) and that the speaker profile can be changed via a DSP programmer tweaking the settings. Expect those advances to be seen in future Sonos products. Cullen also notes that the home audio market is the focus today, but people listen to music in other places, such as in their cars or via headphones — an area Sonos will one day explore. As it does, it’s staying focused on providing the best sound for digital music and continuing to refine the way it builds its products in the service of that goal.


Lesson#2: Consider Usability Before You Build



It took the guys at Sonos a few months to build their first prototype, and at the end, they were left with a product only a geek could love. Realizing this, they sought help from a usability expert, who told them they didn’t need a usability expert until much later in their process. What they needed was an industrial designer who could get in early and help them build the hardware and software with an eye toward the consumer. The team eventually hired Meiko Mieko Kusano, a designer for Phillips, who told them, “Usability is in the bones of the product, not the skin.” Cullen still credits that mentality with Sonos’ success.


“Most consumer electronics companies build out hardware and then add software to update it and change their designs every 18 months. We turned that on its head, building hardware that will last and software that we can update whenever we need to in order to improve the experience.” Cullen credits that shift to Kusano, and offers up Sonos’ Zone Player products as an example. “You should be able to stream music over that for the next 15 years.”


Lesson#3: Don’t Be Afraid to Cannibalize Yourself



That long-term vision for the hardware is part of the success of the Sonos platform, but the other is the philosophy the company has about working with partners and even introducing new products to expand its base. When it launched, a Sonos system could run a user about $99 for a wireless router, another $350 to $500 or so for something that picks up that signal and connects to speakers in one room (each room would need another of these), and a special controller for about $350 to drive the system. But in 2008, Sonos released a free app for the iPod that mimicked the functionality of the controller and thus brought down the cost of the system. Sales surged. The loss in controller revenue was more than offset by sales of the new system, Cullen said.


It now has a free app for the iPad, and as mentioned earlier, Cullen says support for other platforms will come. But last year, Sonos introduced a much more disruptive product: its S5 boombox. For $400, the S5 has speakers and allows someone to create a Sonos network with the addition of a Zone Bridge for $99. The launch of that product has changed the profile for Sonos, moving it out of the specialty market and into the mainstream. At the time of this writing, items No. 3 and No. 6 on Best Buy’s Top 10 bestselling wireless and streaming audio products were S5s. However, Sonos’ S5 cracked the top 100 of Amazon’s Bestsellers in Home Audio & Theater Products list at No. 73, behind rivals Logitech and Bose. But Cullen says the fear of cannibalizing sales of its more expensive gear hasn’t been realized; instead people buy an S5, then tend to add more onto their networks.


Lesson #4: A True Platform Doesn’t Pick Winners

As a platform, Sonos plans to release a breadth of hardware and software to ensure a better digital music experience, but it also extends that to partnerships it signs with music providers. Sonos currently supports Spotify in the U.K. and Scandinavia, and that partnership alone has enabled it to boost sales of its system in those countries by a non trivial amount. In the U.S., a partnership with Pandora has had a smaller but still noticeable affect on sales as well. Cullen said Spotify and other some partners have offered to pay Sonos for providing access to their content to Sonos users, but Sonos doesn’t play that game. “We don’t take revenue from people,” Cullen said. “We don’t want any incentives to guide our behavior rather than the user choosing what they want to listen to. We don’t want to be picking winners and losers.”


So far, Sonos’ strategy is working. The company has now raised $65 million,and while Cullen wouldn’t discuss IPO plans, he says the company has been approached by buyers. However, the $15 billion home audio market beckons, and Sonos believes it has learned how to play the game well and can take the disruption provided by digital music and home networks to give the industry giants a run for their money.

It doesn't seem possible that there'd be money to be made from lending e-books. But at least one woman figured out how to do it, and more little lending conglomerates seem to be on the way.


When on Dec. 30, Kindle decided to allow its customers to lend copies of purchased e-books (but only for 14 days, and only to one person), a 40-year-old Canadian woman named Catherine MacDonald had an idea that literally popped up in her dreams. She started the Kindle Lending Club. It started out as a Facebook site, where she'd match up people who wanted to lend a book to people who wanted to borrow. It quickly grew out of hand, so she looked for angel seed money.



Finding someone who was willing to invest $12,500, she launched a slick Web site and created a place where people can come and look for specific e-books, or offer to lend them. So far, she has lent more than 1,000 e-books among total strangers and it's all worked without a hitch.

A new year often means lofty resolutions, especially when it comes to planning and maintaining a travel budget.



Though there are many personal-finance sites and software out there, this year I'm resolving to use Mint.com's free online tool. You can create plans for saving toward retirement and buying a house, but I'll be primarily using the site for its Travel Goals, which help you set -- and stick to -- realistic travel budgets.



And though the tool obviously doesn't do the hardest part (you still have to save the money), it does track how far or close you are to achieving your Travel Goal.



For example, say you want to go to Hawaii for a week this summer. Once you create a budget by filling in the estimates for airfare, hotel, meals, and other expenses, you can then specify how much you will contribute to that Travel Goal each month.



If you underestimate how much you'd need to save per month, the online tool points out: "Oh no! You aren't saving enough each month to reach your goal on time." The tool then offers you two ways to fix your Travel Goal: increase your monthly contribution in order to reach your desired travel date or postpone your planned date to fit your monthly contribution.



If you stay on track with saving the specified amount each month, Mint.com's budgeting tool highlights (and adjusts) the projected date of when you can afford to take the trip. Save more, and you could afford to take your trip a month or two earlier.



But if you slack on your monthly savings, the date will be pushed back -- a reality check and an instant motivator. Once you mentally equate an unnecessary clothing purchase or an impulse buy to the consequence of delaying your trip by a month, saving becomes a little more real.



Granted, most people will buy plane tickets and reserve hotels with a credit card several months before actually taking the trip; the tool helps track if you'll be able to easily pay it all off after your trip. After all, nothing ruins a vacation more than coming home to bills that you're not financially prepared to handle.



To fund my travels this year, I've linked my Mint.com account to an ING Savings Account labeled Travel Fund.



How do you stay on track with saving up for a vacation?

The theory is simple: "If you don't have the money, don't charge it. Try to leave your credit card at home and only use it to pay bills," advises April Lewis, director of education for Consolidated Credit Counseling Services. Then immediately pay off your credit-card balance. As for old credit-card debt, sit down and commit to paper a plan for paying them off. Go for a quick hit, like paying off the smallest balance first, or decide to take on the highest rate card first. Get the job done.

Here's a second tip: Be proactive about managing your credit. Call up your lender and ask it to lower your interest rate. Usually, lenders will lower callers' rates by 2% to 3%, says Scott Gamm, founder of HelpSaveMyDollars.com. Also check your credit report. You can check your credit for free at annualcreditreport.com, for example. If you see mistakes, contact the credit agencies and get those mistakes corrected. If errors are dragging down your score, eliminating them can boost it to where it belongs and make you eligible for better rates.

2. Think automation

Free online banking tools can make it easier to manage your finances with less work. To help grow your savings, for example, you can schedule regular transfers from your checking account. Manisha Thakor, author of Get Financially Naked: How to Talk Money With Your Honey, suggests setting up the transfer of a set amount of money into your savings account every pay day.

Also automate recurring bill payments so you never miss a due date or pay a late fee, which sends money down the drain. Even without late fees, timely payments are key: 35% of your credit score is based on your ability to make payments on time. If you sign up for automatic payments, however, make sure to check your monthly bills for errors. One other caveat: "Make sure you have enough cushion in your checking account to avoid any overdrafts" before setting up auto-payments, money coach Lora Sasiela says.

Making Easy Money

A few questions for Matt: can you please elaborate on how not extending the debt ceiling is “defaulting on one’s debts?” More specifically, on what partifular debts will be be unable to *avoid default* if the debt ceiling is not raised? For example, if we commence bringing the troops home right now and close a bunch of overseas bases, will that save enough money such that we don’t need to increase the debt ceiling in April (I believe that is when it is expected to be reached). How about if we abolish the Departments of Education, Energy, HUD, etc.? If we make drastic cuts to such government entities, are we STILL going to default on anything? Or is the threat of default simply a concept to hide behind for those who want to continue unsustainable spending?

Using 2010 as a baseline, we brought in 200 billion more in revenue than what is described here as “mandatory” spending. That suggests after mandatory spending, we could use the remaining 200 billion to operate the Federal Government. Further, I bet a bunch of what is listed as Mandatory Spending in the Wikipedia link is not really that. There’s about 600 billion of unspecified “other mandatory spending” in there, much of which is probably hooey. And commencing the restructuring of Social Security and Medicare/Medicaid would similarly provide more headroom. So, the Dept of Education disappears? So what? The Dept of Ed we have totday didn’t exist before 1979. Did the country collapse without it? No. (In fact, Education was both better and cheaper.) Same with the Dept of Energy. Will the country collapse without the Dept of Energy? No. They don’t produce any energy. Same goes for 90% of our bloated government. We need courts. We need defense. (Though we’d be fine with a fraction of what we spend on defense now.)


Hard cuts are just that. HARD. Does not mean they don’t need to be made.


If the approach to a “debt ceiling” is to raise it every time it is reached, it’s not a debt ceiling at all. It’s a fat guy who gets fatter every day, with a legal commitment in writing to start a diet tomorrow. Always tomorrow.


What is more evil? Making hard cuts while we (perhaps) still can? Or kicking the can down the road to GUARANTEED PAINFUL, GUARANTEED COLLAPSE?


When two laws conflict, how are they reconciled? If we have a law that obligates us to spend, and a law that says we can’t spend any more, why is your default resolution that the “don’t spend any more” law is the one that must yield?

Look at the history of most companies, giant corporations of today, especially the online ones such as Google, Twitter, Facebook and many others. They all started as a hobby, as a project, and never specifically to make money out of the idea. All the founders of the above mentioned companies, believed so much in their idea, that they dedicated their life to building it. It is not a matter of luck that they are who they are today, but it is sheer determination and good ideas. Money is a secondary thing; it's the result of what you've done. I never used to believe this but now I do believe it, been there, done that.


As I specified above, I've tried a million types of online ideas and website, but they all failed because I specifically wanted to make extra money. Thought there was only one thing that I really liked and loved, and never gave it a shot, music! It was always my dream to have the time to discover new bands, to have all their original CDs and albums, and if possible get in touch with them.

I’ve spent hours of my life toiling over virtual cities in Maxis’ Sim City series, and it must have rubbed off after all these years. I still enjoy meticulously planning infrastructure, zoning and carefully tweaking finances to this day.

The other day whilst trying to work, I accidentally (oops) went looking for some online heirs to the Sim City throne. Despite simple Flash games lacking the depth of even the original Sim City, I guessed there had to be a few decent, free city building games out there.

ElectroCity

A simple turn-based Flash game created by New Zealand energy company Genesis Energy to give players young and old a shot at managing a town or city’s growth and impact. Players must pay close attention to the levels of energy used, sustainability and environmental factors.

Players are given 151 turns to alter tax rates, build things, destroy things and generally oversee the planning of a city from an environmental point of view. It is up to you to keep your citizens happy, maintain finances and get the highest score possible out of 100 available points.

If you’re seeking inspiration then there’s plenty of completed cities to gawp at, and you can even save your progress and come back to it at a later point. Remember – it’s all about balance.

IBM CityOne

A very in-depth city management game that allows you to choose one of four aspects of city life to manage – energy, water, retail and banking. This game also uses a turn-based system which scores you after each turn made.

There’s a fairly chunky registration form to fill out before you can play (which asks for all sorts of intrusive data) but the game itself functions well, especially if you’re a business-minded individual.

Your city starts off sketchy and greyscale, with colour gradually introduced as you implement much-needed change. At times it plays like a big advert for IBM, but remains enjoyable and looks pretty good to boot. Probably not great on slower PCs, especially those with an aversion to resource-heavy Flash.

City Creator

Not necessarily a simulation or a management game, City Creator simply allows you to do just that – create a sprawling landscape from a set of pre-fabricated buildings and features.

The game features charming pixel art from and an isometric viewpoint, which complements the laid back style of play. Simply drag items from the left hand side of the screen to your city on the right and see what you come up with.

There are 3 building sets to choose from, each with their own unique style. If you register on the site you can save your creations and share them with your friends. If you just want to build a city then City Creator should entertain for a while at least. Be sure to check out their other project Castleford.

Zanpo Virtual Cities

Lovers of Minecraft and pixel art rejoice in this Flash block-based city building game. Instead of building preset structures and features Zanpo Virtual Cities allows you to build fairly detailed city blocks using individual building pieces.

Users then vote on the best ones, and they get added to the virtual city. This one strikes me a bit like online Lego, and the emphasis is very much on building and not management.

You’ll need to register to build, or you can simply choose a city from the drop down list and click City View and see what everybody else has been building.

CityVille

I know, I know. You’re sick of FarmVille, so why on earth do you want to hear about CityVille? Well considering there’s already more than 20 million people playing it I figured it would be an injustice to not include it on the list.

If you’re fine with yet another application accessing all your personal data and posting whatever it feels like to your wall then CityVille might appeal. The game is a casual Sim City-esque sim in which you take a humble town and turn it into a sprawling metropolis.

Graphically the game looks awesome, and there’s the added social interactions provided by the Facebook platform. If only it didn’t clog up your feeds, eh?
